Pumpkin Spiced Blondies
Autumn is fast approaching and I love all seasons so i can't say it's my favorite but Autumn is pretty great. Everything turns vibrant orange and as the weather cools down everything else warms up. I put cinnamon in everything I possibly can, start making comforting casseroles for dinner and pumpkins come into play! This is my recipe for Pumpkin Spiced Blondies that I like to make all through the Autumn and Winter.
Ingredients: Makes 8
1 cup oat flour
1 cup pumpkin puree
1 cup Greek yogurt or quark
2 tbps ground chia seeds (optional)
2 tsp cinnamon
1 tsp baking powder
2 tbs honey
1/2 teaspoon stevia (or other sweetener)
The ingredients for the frosting are below but optional, I always vote frosting.
Start by preheating your oven to 180 degrees C. Mix all the dry ingredients together and beat the eggs separately. Then add the wet ingredients to the dry and finally mix in the beaten eggs. I use a square baking tin so you may need to grease and line this unless it's silicone. Pour in the mixture and bake in the oven for 20 minutes. Check it after 10 minutes by putting a clean knife into the center, if it comes out clean it'll just need two more minutes but if not leave it in for the remainder of the time. If the edges are looking a little brown but the center is not cooked, cover it with a sheet of baking parchment until it's done. When it's ready remove it from the tin and leave to cool fully on a wired rack. Once cooled cut it into 16 squares.
For the frosting:
2/3 cup quark
1 tbsp honey
Just mix these together and start spreading the love. If your feeling fancy you can dust the finished blondies with cinnamon.
All that's left is the clean up, I can't wait for a dishwasher!
